Providence is calling a Cook II (Dietary, Variable Shift, 1 FTE - 40 hours per week) to St. Elias Specialty Hospital in Anchorage, Alaska. In this position you will:
Review menus to determine type and quantities of meats, vegetables, soups, salads, and desserts to be prepared. Follow production sheet from Food Service Manager
Plan cooking schedule in conjunction with Manager to ensure that food will be ready at specified times. Confer with Manager regarding modified diet preparations and use of leftovers
Prepare cooking and seasoning of food items for each meal
Measure and mix ingredients according to recipe, using a variety of kitchen utensils and equipment such as blenders, mixers, grinders and slicers to make sauces, soups, stews, casseroles and desserts
Bake, roast, broil and steam meats, fish and other foods
Observe and taste foods being cooked and add ingredients or seasoning to improve flavor or texture as needed
Procure food stuff from refrigerator, freezer or other storage area
Carve portions of meat, fish and fowl for individual servings. Portion servings according to menu combinations or orders for patients
Preparation of all food in sufficient quantities to cover all service requirements
Test food being cooked by testing, smelling and/or using food thermometer to determine that it is cooked. Adjust heat controls and timers on ovens, grills, etc. as required
Check temperatures of food prepared to ensure proper temperatures for service
Assist by placing weekly food and supply orders accurately by guidelines established by Food Service Manager
Provide assistance on serving line
Maintain cooking area in a clean, neat, and orderly manner
Respond to changes in workload schedule as necessary; continually use time in a productive manner
Required qualifications for this position include:
Formal or on-the-job training of food preparation in cooking, estimating quantities for food needed, in requisitioning and storage of food and supplies, in general kitchen management, and in principles and management of sanitation and safety in handling food and equipment
Anchorage Food Worker Card
2 years training in large scale commercial or institutional food preparation

St. Elias Specialty Hospital is owned by Providence Health System. The hospital has 59 beds, almost all private rooms. The facility features state of the art equipment to provide extended inpatient acute care for patients.
At St. Elias Specialty Hospital, we provide customized, physician-driven services for patients requiring longer stays in an acute care environment due to multiple or complex medical conditions. We are not a permanent placement for patients; rather we are an answer for many patients who are acutely ill and need to take the first steps towards rehabilitation or home.
